Half my takings are cash. How do you keep that clean?

We tie the daily cash to the till Z-reads and to the bank deposits, so every day has a figure that reconciles rather than a rounded guess. That routine is what makes a cash-heavy café defensible if HMRC ever reviews your takings. We also flag persistent shortfalls, which usually point to a till procedure rather than theft. The point is that the cash line is evidenced, not estimated.

Do card processing fees come off my sales or count as a cost?

They are a business cost, and we record them as one. Your acquirer deducts a fee from every card sale before the money reaches your bank, so gross takings and banked cash never match. We reconcile the settlements so the fee is booked as an expense you can see and claim, not lost in the gap. Across a year of small transactions that adds up to a meaningful deduction.

Why does the same sandwich have different VAT?

Because VAT follows how the food is sold, not just what it is. A cold sandwich taken away is zero-rated, but the same sandwich eaten in at your table is standard-rated at 20%, and anything hot is standard-rated either way.
